Chilaquiles
We got this recipe from a friend in our ward. The kids love it and it's quick and easy. I've made modifications to make it a little easier for me to throw together.
| 1 | can | Cream of Chicken Soup |
| 1/2 | c | Salsa - Chunky |
| 2 | c | Chicken - cooked and shredded |
| 2 | oz | Cheddar Cheese - Grated |
| 1 | c | sour cream |
| 8 | c | Tortilla Chips |
Preheat oven to 350*. Combine soup, salsa, chicken, sour cream and half of cheese. Place 1/2 of chips on bottom of 8x8 pan, top with half soup mix. Repeat layers. Top with remaining cheese. Bake for 15 minutes or until heated through.
When I'm in a hurry, I sometimes don't create the layers and put the chips on the bottom of a 9x13 pan then top with sauce and cheese.
